Some rank 2 colonies look very big in the world. How do they get or look bigger then some colonies?

It depends on your population/worker counts. The more workers you have, the bigger your colony gets.

I have a count of 408 workers now. So that seems like a medium sized colony huh

Yeah, pretty much. Just don't rush units or build unnecessary outposts and not only will your colony look a lot bigger but you'll get more resources per tick too.
